Produced in La Compañía, Oaxaca, by Maestros like Gonzalo Hernandez Bigotes and Luis Pacheco, this mezcal is distilled in copper pot stills following time-honored ancestral methods, including roasting the piñas in underground pits, which imparts a signature subtle smoke.
